
Of all wild or domesticated animals, the lamb is without exception the most
useful to man as a food and it supplies him with the lightest and most
nutritious of meats.
The meat from lamb is tender and succulent and provides a
number of cuts which are particularly flavoursome and juicy. The Karoo and
Kalahari lamb is
the most well known for its distinctive flavour.
Many of the early settlers in South Africa brought with them their own national
favorite dishes which provides the strongest evidence of our rich and diverse
cultural heritage - Greek lamb with yogurt; Mutton Curry, a favorite of the
Cape Malay people and the traditional Cape Lamb Pie are some of the dishes which
have become popular over the years.
Sheep numbers in South Africa are around the 29 million mark making it one of
the most important in the agricultural sector providing not only a source of
meat and wool but also much needed employment.
